What is and how do we use extra virgin olive oil of ancestral varieties, the 2345?

2.345 presents in limited edition the aromas and tastes of ancestral varieties recovered from our estates

Throughout its millennial history, olive oil has been produced from very diverse varieties.

Its organoleptic qualities have allowed us to produce an oil with an enormous personality: concentrated, balanced and fresh, with a harmonious sensation and powerful vegetal notes.

why 2.345?

The reason is very simple. In each bottle there are 2,345 olives, the properties of 4 ancestral varieties recovered

After years of recovering varieties that had been lost, we have selected the four with the most outstanding properties. One has a fascinating aroma, another adds complexity to the flavor, a third creates balance and the fourth contains a very high amount of polyphenols, chemical components with health benefits. Together, they compose an oil that is both ancient and groundbreaking, which will not leave anyone indifferent.

How can we use it in the kitchen?

  • To dress Swiss chard and spinach.
  • To accompany pumpkin (grilled or in cream)
  • To dress bud braised with anchovies and dried tomato
  • For the beef carpaccios
  • For semi-cured and cured cheeses.
  • For the dried fruit creams
