Cucumber noodles with yogurt and almonds sauce

Clean carefully the cucumbers and cut into strips with a potato peeler.

Place the strips on a flat tray, so the sauce can cover everything.

In a bowl put a Greek yogurt (with no sugar!), some mint leaves and almonds. Mince well and when we have a homogeneous mass, cover with the sauce the cucumber muddles.

We leave in the refrigerator for 1 hour or until is cold enough.

Before serving, well dress with Olicatessen Olive Oil..

cucumber
Greek yogurt
fresh Mint
Almonds (is also delicious with hazelnuts or pine nuts)
Organic Extra Virgin Olive Oil Olicatessen.
