Autumn recepie: Pumpkin cream
Consuming seasonal products allows us to enjoy the products when they are tastier.
Now is the time for spinach, green asparagus, sweet potato, cabbage, cauliflower and broccoli, also zucchini and, cucumber and pumpkin, endives and not forgetting mushrooms!
Vegetables have diuretic effects, they do not contain fat, they help regulate intestinal transit. They are rich in potassium and iron.
Here we offer you an autumn recipe that we love!
Pumpkin cream
Ingredients for 4 people:
- Pumpkin: 600gr
- Onion / leek: 150 gr
- Pumpkin seeds: 20gr
- Water / vegetable broth: to cover, about 500 ml approx. And depending on how you like liquid-thick.
- Garlic: to taste (minimum 1 clove)
- Salt to taste
- olicatessen organic extra virgin olive oil: to taste
Peel and chop a couple of garlic cloves, the pumpkin and the leeks (reserve separately)
Put a little oil in the pan and brown the garlic. When it breaks color, add the onion / leeks for 5 minutes until they soften a little. Then add the pumpkin. After 5 minutes we cover with water-vegetable broth and once it starts to boil, we leave it for 20 minutes. Now all you must do is grind and serve!
And now, the dressing! oohh!
You can add some pumpkin seeds and a good splash of Olicatessen. NOTHING ELSE!
