The embryo grows, the olive begins to form, in the form of a small pellet.
It is the fruit that will start to grow fat during the summer.
It is a very beautiful time on the estate. Every day you see the evolution, the changes are constant and noticeable.
Looking at these mini-olives, it is hard to believe that they will end up being large enough to give enough extra virgin olive oil.
And yes, they do! And since there is still time, then in the meantime, we will enjoy watching them grow.
