Vegetables contain a lot of water, hydrating the body, have few calories and protein and do not contain fat. But, they contain a lot of fiber and vitamin C and carotenoids. They are rich in potassium and iron.
Here we leave you a spring recipe that we love!
Peas with new potato and aromatic herbs
Ingredients for 4 people:
- Peas: 600gr
- New potato: 200 gr
- Vegetable broth: ½ glass
- Aromatic herbs: To taste
- Garlic: 2 cloves
- Extra virgin olive oil Olicatessen: To taste
Step by Step:
Heat a little oil in the casserole with a couple of garlic cloves (without peeling!). Add the potato cut into small cubes and brown it a little (3-5 minutes). Pour in the peas and stir well.
Add ½ glass of broth and boil for 7-10 minutes covered. Uncover and season with aromatic herbs (rosemary, thyme or mint). Cook for 2 minutes without a lid. Let stand for another 5 minutes, covered and away from the heat.
Right when it’s served, a nice squirt of Olicatessen!
